Seaweed bread 'key to obesity'

Researchers found seaweed fibre could reduce the body's fat uptake by more than 75%.
A fibrous material in Sea Kelp called alginate was better at preventing fat absorption than most over-the-counter slimming treatments, laboratory tests showed.
Dr Iain Brownlee, who co-led the University of Newcastle team, said: "This suggests that if we can add the natural fibre to products commonly eaten daily - such as bread, biscuits and yoghurts - up to three quarters of the fat contained in that meal could simply pass through the body.
"We have already added the alginate to bread and initial taste tests have been extremely encouraging. Now the next step is to carry out clinical trials to find out how effective it is when eaten as part of a normal diet."
The scientists used an "artificial gut" to test the effectiveness of 60 different natural fibres by measuring the extent to which they affected the digestion of fat.
They presented their findings at the American Chemical Society's spring meeting in San Francisco, US.
Dr Brownlee said the aim was to see if the same effects modelled in the laboratory could be reproduced in living volunteers.
"Our initial findings are that alginates significantly reduce fat digestion," he said.
The research is part of a three-year project funded by the Biotechnology and Biological Sciences Research Council (BBSRC).
Basics of Seaweed or Algae.
Seaweed is a Photosynthetic organism, relying on a variety of pigments to capture light energy from the sun.
In the west, seaweed is best known as an exotic ingredient in Japanese and
macrobiotic cuisine. The available nutrients

Japanese are among the greatest consumers of seaweeds and many seaweed or sea
vegetable varieties are best known by Japanese and Chinese names. Kelp
known as kombu and konbu. Konbu has a light, slightly
salty seaweed flavour. Konbu contains a lot of iodine which is effective in
increasing your energy level. It also contains a lot of potassium, which is
beneficial in lowering blood pressure. Used to make the Japanese soup stock:
dashi which is an essential healthy ingredient in many Japanese recipes.
Increasingly, Seaweed & Algae are now
used as a Nutritional Supplements in the Prevention of Chronic Disease. Most
people don't think of turning to the Earth's oceans for vegetables, but there
is a vast source of nutritious food available there. Sea
vegetables contain 10 to 20 times the mineral and trace elements and vitamins
of land plants, in addition a rich sources of both soluble and insoluble dietary
fiber. The fibres (Polysaccharides), several ‘seaweed’
pigments including chlorophyll, and all the antioxidant vitamins and minerals,
help cleanse the digestive tract, blood, lymph, and kidneys, and neutralize
cholesterol. Konbu/Kelp is used to make the Japanese soup

Unbelievable, Seaweed contains neither roots nor blood vessels, feeding directly from the seawater through the plant (Cells) surface. It is able to taking full advantage of all the nutrients present in the sea without having to undergo any complex transformations.
Sea plants are regarded as more potent than land plants because they contain a great number of
organic compounds known as phyto (plant) chemicals. Many of these organic
compounds are necessary, but missing in our modern food supply. This mineral
content of seaweed,
vegetables, and fiber is extraordinary, and lies at the root of many of their reputed healing
properties. The major minerals are instrumental in all kinds of life-sustaining
activities in your body. Although therapeutic seaweed constituents can be
extracted and are available and used in cases of chronic conditions, it is
easier and cheaper to use whole seaweeds, not extracts. Use the seaweed
uncooked if possible.

Rockweed
Tea, Seasonings and Flavoring, and Salt Replacements
Irish Rockweed or Wack is an important ingredient
by the production of slimming tea. In general, this tea is made from rockweed
that has been air- or sun-dried, but it can also be made from fresh seaweed.
Used as flavouring for the vegetarian market,
the ground sea vegetables impart a natural seafood dimension to flavour
profiles. Kelp is one of the seaweeds used to enhance existing flavours without
MSG or other chemicals.
Salt: Seaweed Table Condiment contains
between 35-45% of minerals, low in sodium content and high in potassium. These dried
pieces of specially prepared wild Seakelp or seaweed-wrack have a subtle, nutty
vegetable flavor. Kelps have higher potassium content than other seaweeds.
Seasoning & flavourings.
A Japanese
scientist observed in 1907 that there was a taste, common to many savoury
foods, which did not fall into the category of the four well known tastes of
sweet, sour, bitter and salty. Professor Ikeda called this new taste
"umami". Through experiments with stock prepared from kombu seaweed
(an ingredient in traditional Japanese cuisine) he identified glutamate as the
source of umami and decided to use it to produce a food seasoning. MSG was
first marketed in Japan in 1909. It occurs in virtually all protein containing
foods including meats, fish, vegetables and dairy products. Various cheeses,
tomatoes, peas and mushrooms are among the foods richest in glutamate.
Glutamate from our diet is a source of energy for the digestive system, and the
human body itself produces around 48 grams of glutamate every day. Kelp/kombu
is still used for its ability to stimulate or strengthen the taste and flavor
of the food it is cooked or mixed.
The flavor enthancing properties of sea kelp without dominating the flavor present the basis of its popularity/success and wide applications.
