Seaweed instead of salt, salt replacement.
Both milled sea kelp and Bladderwack are used as Condiment (salt substitute) and contain a low
sodium content and are rich in potassium. Seaweed
draws an extraordinary wealth of mineral elements from the sea that can account
for up to 36% of its dry mass. The mineral macronutrients include sodium,
calcium, magnesium, potassium, chlorine, sulphur and phosphorus; the
micronutrients include iodine, iron, zinc, copper, selenium, molybdenum, fluoride,
manganese, boron, nickel and cobalt.
The salt substitute made from of specially prepared kelp
or wild wack’ and has a subtle, nutty vegetable flavour. The electrolytic
magnetic action of the sea plants releases excess body fluids from congested
cells and can dissolves fatty wastes , replacing them with depleted minerals,
particularly potassium and iodine. To much sodium can cause bodily harm but for
potassium there are no maximal limit. Most food products contain added salt
(sodium salt) and the daily amount used or consumed will be in many cases too
high.

Rheological properties of seaweed or food
structuring.
Many
food products are not homogeneous. Water-soluble phycocolloids act as stabilizers in complex systems, such as fruit juices
with fruit cells, to keep particles or small droplets evenly distributed in the water phase, mainly by increasing the
viscosity of the water phase. This will prevent both precipitation and separation.
Furthermore, the addition of charged polymers
such as alginate may produce charged films at the interface, so that
individual particles or droplets will
repel each other. They are non-toxic to humans, have unique rheological
properties and cost less than other industrial gums.
Instead
of using the extract (refined) seaweeds, you can use the natural product either
milled or as a whole.

All the seaweed we use for our food products is freshly cut then dried and milled or fermented.
The sea vegetables we use are Kelp or Laminaria, Palmatina or Dulse, Wild Nori, Irish moss, Ulva or Sea Lettuce, Wakame, Fucus and Rockweed.
You can eat seaweed as a vegetable, use it milled and sprinkle it on food, add it to cereals or mix it with flour. Seaweed can also be used for decoration or as a replacement for salt. Kelp, Dulse and lettuce are excellent as salt replacements and provide a very simple method to enrich your meals.
When we harvest seaweed it contains a lot of water. After drying the net weight is reduced to approximately 10%. One kilo of dried kelp is equal 10 kilos fresh, so if you use it dry do not use it in large quantities. |
